What is a Calzone?
A calzone is a folded pizza cooked in the oven with sealed borders to keep everything within!
A calzone may include everything that is used on pizza! One half of the pizza dough in the form of a circle is covered with the pizza toppings. The dough is then cooked in the oven after being folded over, crimped, and covered with either an egg wash or a brush of olive oil.
Stromboli vs. Calzone
Although a typical calzone often contains ricotta, strombolis and calzones both share the same dough and even ingredients.
The way they are sealed is the key distinction. A calzone is crimped and sealed, and a stromboli is wrapped up. While a calzone is typically hand-held or single-serving, a Stromboli is cut into slices after baking.
Tips & Variations
Dough Use either store-bought or canned pizza dough. With this recipe, either works nicely.
Many neighbourhood pizzerias (or Italian markets) offer freshly prepared dough that may be frozen. I usually purchase a few packets to have on hand.
Fillings Pizza sauce is used in little amounts, and extra is always provided for dipping. There are no restrictions on fills. Make sure your meats are cooked, and cook and/or fully drain any watery vegetables (such as mushrooms or pineapple).
Cheese Mozzarella adds the ideal taste, as does a little parmesan, if you prefer. Ricotta is a classic and delectable ingredient (but not something I usually have on hand). Use whatever substitutes you have on hand.
Because the contents will be hot, be sure to give the calzones some time to cool. The cheese won’t get too runny if it is given a few minutes to settle.
How to Make a Calzone
Making calzone is as easy as folding a pizza in half!
- Divide pre-made pizza dough into equal portions and roll into a circle.
- On one half of the dough, spread the ingredients. Fold over and crimp the edges.
- Cut air vents, brush with oil and bake (per recipe below).
Leftovers
To preserve leftovers for up to 3 days, place them in an airtight container and store them in the refrigerator.
Put the calzones in a zipped bag and mark the date on it before freezing. They ought to remain fresh for around a month.
Easy Homemade Calzone Recipe
PREP TIME: 20 minutes
COOK TIME: 15 minutes
TOTAL TIME: 35 minutes

These Calzones filled with cheese and toppings. Eat them fresh from the oven!
Ingredients
- 1 pound pizza dough
- ½ cup pizza sauce
- ½ cup yellow onion diced
- ½ cup green bell pepper diced
- ½ cup sliced pepperoni
- 1 cup mozzarella cheese shredded
- 1 tablespoon olive oil
Instructions
- Preheat oven to 425°F and line a large sheet pan with parchment paper.
- Divide pizza dough into 4 equal parts and roll each dough ball into a 1/4 inch thick circle.
- On half of each dough circle, add equal parts sauce, yellow onion, green bell pepper, and sliced pepperoni. Make sure to leave a little room around the edges so you can crimp the calzone shut.
- Sprinkle the toppings with equal parts shredded cheese. Then fold the other half of the dough over the toppings and crimp the edges.
- Cut 2-3 air vents into the top of the calzone and place it on to the prepared baking sheet.
- Brush with olive oil and bake for about 15 minutes or until the dough is fully cooked and the calzone is golden brown.
- Serve with warmed pizza sauce for dipping.
Notes
Use homemade pizza dough or store bought.
Check your local pizza places (or Italian market) for fresh homemade dough and store some extra in the freezer.
Ensure meats are cooked and any watery veggies (like mushrooms or pineapple) are cooked and/or well drained. A few spoonfuls of ricotta can be added for a traditional calzone.
Be sure to allow the calzones to cool a few minutes as the fillings will be hot. A couple of minutes of rest will keep the cheese from running out.
